Chablis

Chablis is the northernmost district of Burgundy, lying 130 km north-west of the Côte d’Or along the A6 in the département of the Yonne.  The vine area surrounds the town, which itself lies in a hollow.  The best vineyards lie on the slopes surrounding the town, with the (seven) best Grand Cru vineyards congregated together on the south-west facing hillside.  Chardonnay, known locally as Beaunois, is the dominant grape and Patrick and Martine Guitton’s range expresses this versatile variety in all its classic, green-tinged, and flinty, Old World glory.  Martine’s enthusiastic son, Christophe Camu, makes a clean, unoaked Petit Chablis from vines that border Premier Cru slopes.
