This signature Shiraz is an intense, purple-hued, spicy blockbuster that is infused with cassis, pencil lead, mineral, blueberry, and blackberry.

- Vinification: Twelve hectares of organically (dry) grown grapes are picked by hand and completely de-stemmed prior to a maceration of around 6 weeks. The wine is then transferred into small oak barriques, 20% of which are new, for 14 months. Georgia's Paddock shiraz is predominately aged in American oak.

Jasper Hill's principal wine, in terms of production, is the dense, black-fruited ‘Georgia’s Paddock’ Shiraz. Infused with bright cassis flavours over a background of ripe tannins, this iconic thoroughbred wears its alcohol lightly and has great length and delineation. Approachable from bottling, if decanted, it will age well for 20 years.
