- Cellarage: Drinking well now but this typical Clare Valley Cabernet will improve over time and can be cellared for 8 years.
- Vinification: Grown from 25-year old vines, the Cabernet grapes are crushed by static fermenters. Extended time on skins provides a vibrant deep purple colour and a firm tannin structure. The juice is then pressed and transferred immediately to French barrels to undergo a natural malolactic
fermentation. The wine remains in oak for 18 months until bottling. - Alcohol by Volume (ABV): 14.5%

Neagles Rock Vineyards make a range of full-bodied, fruity reds from classic French grape varieties. The Cabernet Sauvignon has a terrific bouquet of ripe blackcurrants with subtle minty undertones and a wealth of ripe berry flavours offset by some deft oaky undertones.
