Pouilly Fuissé Wine
This elegant Chardonnay from Stéphane Brocard hails from Pouilly Fuissé in the Mâconnais subregion of Burgundy, and this more southerly location makes it richer, fleshier and more gastronomic than his Bourgogne Chardonnay. A fine pairing for smoked fish.

Situated right in the south of the Maçonnais region, the AC of Pouilly-Fuissé (not to be confused with Pouilly-Fumé in the Loire) is formed by a series of amphitheatres that trap the sun, producing richer, fatter Chardonnays than their brethren further north.
Stéphane Brocard produces an excellent Pouilly-Fuissé, called 'Trilogie des Terroirs', as it hails from vines located in three distinct parcels, adding complexity to the finished blend. It is fuller and fruitier than the Bourgogne Chardonnay and will stand up to more elaborate dishes.
