- Vinification: The grapes are picked at optimum ripeness, de-stemmed and, after racking, the juice is fermented for 20 days with malolactic fermentation being blocked for extra vitality. The wine is then fined and filtered prior to bottling.

Costières de Nîmes: Château Roubaud: Cuvée Passion Blanc 2009
A sapid dry white, made from 60% Roussanne and 40% Grenache Blanc. It has subtle notes of honey, wild herbs and flowers and a rich, fruity, slightly peppery palate with a well-balanced acidity leading on to a fresh, dry finish. Ideal food pairings are seafood, white meats and goat cheeses.
