- Cellarage: Capable of ageing gracefully over several years it is, however, charming when very young.
- Vinification: Machine harvested, fully de-stalked grapes undergo a 2 week cuvaison in stainless steel vats. After alcoholic fermentation, malolactic fermentation takes place. The finished wine is filtered prior to an Easter bottling.

Chinon: Château de Ligré Blanc 2010
We were first drawn across the Loire to Château de Ligré, on the southern bank, because Pierre and Fabienne Ferrand produce a wonderful rarity in the form of a dry white Chinon. Made from pure Chenin Blanc, this zesty, blossom-scented white has attractive cutrus tastes and a tingling mineral-edge. It makes for a fabulous aperitif or partner to shellfish.

Jane MacQuitty in The Times on Saturday, 10/09/2011 says:...a tasty white chinon, made from the same chenin blanc grape responsible for the Loire's most majestic and enduring white, vouvray, had always eluded me: it accounts for only 1.5% of chinon's output. So hats off to Yapp Brothers for tracking down the Ferrand family's elegant, dry, grapey minerally 2010 Château de Ligré Chinon Blanc.
Simon Hoggart - The Spectator says:Château de Ligre 2010 is a Chenin Blanc made by the Ferrand family. Chinon and Vouvray are the great wines from this grape made in this neck of the woods, and I personally am a huge fan. As was Rabelais, who also lived near here, though I doubt that the wine he drank was a patch on this. It’s smooth, glossy, aromatic, and very elegant indeed.
