- Vinification: Vinification takes place in stainless steel vats after the grapes have been entirely de-stalked. The wine is left on its lees for a short period of time and is then fined with bentonite and chilled to 5ºC before being filtered prior to an early spring bottling.

The Teillers' white Menetou Salon Blanc is a firm favourite chez Yapp. It has pineapple and grapefruit notes on the bouquet and a palate of succulent (almost tropical) fruit and a dry elegant finish.

Simon Hoggart - The Spectator, March 2011 says:...a stunning wine, a Menetou-Salon made in the village of the same name. This was the home of Jacques Coeur, who was minister of finance for Charles XII, and he built a magnificent chateau here. But, again, thanks to old technology the wine he drank would be greatly inferior to the delicious drop made by Patricia and Oliver Teiller. They make only 50,000 bottles a year of their Ch. Teiller and sell half of that to visitors at the door. Menetou-Salon is the much smaller appellation next door to Sancerre, and I think it makes wines just that bit juicier, richer and fruitier – for a pound or so less. A gorgeous, silky wine.
