The Vouvray Moelleux is a botrytised wine - 'noble rot' fungal action across the crop creates glycerol, dextrin and other compounds. These contribute to the texture and unique and desirable honey, toast and apricot flavour found in wines produced in this way. It is capable of taking a decade’s bottle-age in its stride.
