A classic, dry Vouvray with apple and citrus flavours and a refreshingly crisp acidity prior to a clean, fresh, uplifting finish.

- Cellarage: A very versatile wine that drinks well young but, with a tiny hint of residual sugar, also has good ageing potential.
- Vinification: The grapes are pneumatically pressed and settling takes place over 24 hours. Fermentation is temperature controlled using cold water circulation. The wine winters on its lees before being bottled in the April following the vintage.

Vouvray Sec 2008
This apple-scented, mineral-edged, whistle-clean Chenin Blanc makes a perfect foil for the locally-made potted pork rillettes. It is a dangerous combination as both are very more-ish.

Simon Hoggart - The Spectator October 2010 says:Thoroughly recommended... the Vouvray Sec 2008. This is made by Jean-Claude and Didier Aubert from the Chenin grape and it is just lovely. In some hands Chenin blanc can be thin and weedy, but this is plump and rich while being absolutely dry. Gorgeous as an aperitif, but also perfect for drinking with food.
