Only when favourable conditions prevail, Peio and Lucie Espil make this patrons cuvée called Bixinto. It is a blend of 60% Tannat, 25% Cabernet Franc and 15% Cabernet Sauvignon.

• Vinification: Very low yields (20hl/ha) of hand harvested grapes are de-stemmed and pressed prior to a 10 day cuvasion and then alcoholic and malolactic fermentation before an eventual egg white fining, filtration and bottling 20 months after the harvest.
