The specialised
Méthode Dieoise is reputed to pre-date the well-known
Méthode Champenoise - especially by the 30 or-so independent wine makers who keep the practice going around the town of Die in the picturesque Drôme river valley. This tricky process involves chilling the wine to arrest fermentation and slowly filtering it to remove any grape debris but leave enough active yeast cells to induce a wonderfully frothy mousse of very fine bubbles. The eponymous Clairette grape is blended with Muscat and the finished wine is fresh and uplifting with a delicate palate of sweet table grapes and a relatively low alcohol by volume of around 7°. Jean-Pierre Achard and his son Thomas of Domaine Achard- Vincent produce their exemplary version organically so, in our opinion, it practically qualifies as a health drink.
