A wonderful esoteric, slightly resinous, full bodied, dry white wine with subtle, sherry-like aromas and wild herb and mineral tastes.

- Vinification: The climate is well suited to viticulture as plenty of sunshine ensures optimum ripening conditions for the grapes whilst the strong Tramontane wind keeps the vines pest free. Grown on 100% schist, only the best fruit is picked 'à la main bien sûr!' from 30-year-old vines. The wine is pressed in the Vaslin-Bucher press and bottled at the beginning of the following summer.

Domaine La Tour Vieille: Collioure, Les Canadells 2010
Domaine la Tour Vieille has bottled ‘Les Canadells’ - this complex blend of 30% Vermentino, 20% Grenache Gris, 20% Grenache Blanc, 20% Macabeau and 10% Roussanne, since 2003 when the appellation of Collioure was officially permitted to produce white wines. It is fermented on its lees in barrel and vat with regular battonage and the finished wine is highly distinctive with an oxidative (in a good way), sherry-like bouquet and rich, persistent, herb-infused flavours.
It is a great food wine, and producer Christine Campedieu is very precise in the dishes she recommends as partners – rock fish, grilled squid, white meat in sauce or cheese (specifically Comté, Camembert or Reblochon).
