It pays to decant this delicious, contemplative wine from its cramped 62cl 'clavelin' bottle and serve at room temperature (14 to 16 degrees C.) with a generous slice of Comté and a handful of walnuts.

Tasting Notes

No Jura tasting worth its name would be complete without the region's famous speciality, Vin Jaune, which is made from pure Savagnin that is raised in barrel under a veil of yeast for a minimum 6 years and 3 months before being transferred into a distinctive 62 centilitre bottle known as a 'Clavelin'. The finished wine has a powerful, yeasty, dry and persistent palate with complex characteristics of nuts and minerals. It makes a terrific partner to strong, hard cheeses and will age indefinitely if properly cellared.

Domaine Jean-Louis Tissot

Founded in 1969 after the marriage of Jean-Louis and Françoise Tissot, both from winemaking families, this 17 hectare estate is now ably run on lutte raisonnée principles by their children Valerie and Jean-Christophe. The domaine is situated in the picturesque hill village of Montigny-les-Arsures in the heart of AOC Arbois and they produce the full gamut of Jura wines and spirits.
