Vouvray: Jean-Claude & Didier Aubert Moelleux 2022
A luscious, honeyed Vouvray wine with good ageing potential. From pure Chenin Blanc, this sweet Moelleux, which is only produced when the correct climatic conditions prevail, has a wealth of succulent candied-apple and creamy curd flavours offset by a fine acidity.
The Vouvray Moelleux is a botrytised wine - 'noble rot' fungal action across the crop creates glycerol, dextrin and other compounds. These contribute to the texture and unique and desirable honey, toast and apricot flavour found in wines produced in this way. It is capable of taking a decade's bottle-age in its stride.

Jean-Claude & Didier Aubert
The Aubert family started here in 1823 and, today, Jean-Claude and his son, Didier, produce equal proportions of still and sparkling Vouvray wines from 30 hectares of vines. The area is particularly favoured by a soil of volcanic limestone known as tuffa that not only provides the vines with excellent drainage but can be excavated to create ideal subterranean cellars for aging the wine. The Aubert cellars lie below 12 metres of rock.
