François Gay's Premier Cru 'Serpentières' has passed extensive taste testing with flying colours so is certified for all manner of beef dishes - especially those à la bourguignonné - and the Graillot brothers' Fleurie is a favourite with ham, charcuterie or those all-important leftovers – bubble & squeak, anyone?
