From six different domaines: three first-class whites from Beaujolais, Chablis and the Mâconnais that are in prime form, plus a trio of reds from appellations that have excelled in recent, warmer vintages.

Chez Yapp, Petit Chablis is essential company for shellfish, bivalves or smoked salmon – caviar optional – whilst saving the Aucoeur's Beaujolais blanc for pre-prandial palate-sharpening duties. Eric Savaret's Mâcon Premier Cru would provide the perfect accompaniment to the blessed bird although any of the reds would be suitable. François Gay's Premier Cru 'Serpentières' has passed extensive taste testing with flying colours so is certified for all manner of beef dishes - especially those à la bourguignonné - and the Graillot brothers' Fleurie is a favourite with ham, charcuterie or those all-important leftovers – bubble & squeak, anyone?

An old-vine Beaujolais Villages blanc made from pure Chardonnay that sees no oak, this wine has fresh apple blossom scents and a taut and minerally, whistle-clean palate. It makes a bracing aperitif or partner to dressed crab or whitebait.

Chablis' famed soils of Kimmeridgian and Portlandien clay and limestone are full of millions of tiny fossilised oyster shells. It is this limestone that is said to be responsible for Chablis steely, flinty reputation. And Dylan Camu’s Petit Chablis has it in spades. A new arrival to Yapp Brothers from the 2021 vintage, it comes from vineyards on the higher slopes of the hills overlooking the Serein river around the villages of Chablis itself.

This Pouilly-Fuissé 'Premier Cru' 'Sur La Roche' is a wonderfully soft and ripe organic Chardonnay from the experienced hands of Eric Savaret in Vergisson. The area produces some of the best-value Chardonnay in Burgundy and its elevation to '1er Cru' status is due recognition of its efforts to produce high quality wines. Textbook notes of bright zippy citrus, a flinty minerality, ripe stone fruit and lightly-buttered toast linger on the finish. Certified as an organic wine.

From plots in the village of Brochon (just north of Gevrey-Chambertin), this Côte de Nuits-Villages wine is fantastic value. The flavour profile has a little more red cherry fruit than its sibling Marsannay with an expressed minerality, supple mouthfeel and crisp acidity.

Known as the ‘Queen’ of Beaujolais Crus, Fleurie is renowned for its aromatically perfumed, floral wines. This Gamay from the Graillot family is no exception, with hints of roses and violets on the nose lifting soft red fruit flavours on the palate. Certified organic.

Pascal Gay’s Premier Cru Pinot Noir comes from the northern end of the Côte de Beaune in the terrific 2019 vintage. Lighter in style than his Beaune 1er Cru from the same estate, this Savigny-les-Beaune displays a classic red cherry hue and raspberry flavours with layers of spice and lovely length.
