Chicken, poussin or guinea fowl spatchcocked & cooked on a bed of fennel and thinly sliced waxy potatoes makes a simple and delicious meal with the great advantage of using only one dish to cook. Add a splash of white wine to the dish and enjoy with a minerally white such as Chablis 2013: Christophe Camu (the sort of wine that even ABC-ers love).

A good steak frites is hard to beat but if you fancy a change try Yotam Ottolenghi's wonderfully aromatic beef, apricot and almond pilaf which would be beautifully matched with a glass of Chinon 'L'Arpenty' 2013.

While the weather is still bitterly cold treat yourself to the wonderfully easy and indulgent dish of baked camembert. Simply bake the whole cheese in its wooden box for 10 minutes and serve with baguette or pain de campagne and a glass of the lovely mid-weight Bourgogne 'Pinot Noir' 2013: Stephane Brocard.
