At last the weather has warmed up, to celebrate uncork a bottle of Coteaux de Cap Corse: Domaine Pieretti Rosé and sit back and sip in the evening sunshine with some good olives, salted almonds and thinly sliced chacuterie (our current obsession is iberico ham).

Recently we were lucky enough to have been given two beautiful Sea Bass (called a ‘brother & sister’ due to their equal sizing) by the generous Angharad and Richard from the Whitstable Oyster Stores. We baked them with lemon, olive oil and rosemary and served them up with new potatoes with mint & butter and roasted cherry tomatoes. The flavours were fresh and robust and were perfectly accompanied by the white Bellet Domaine de la Source.

Now is the time to try some lighter reds, perhaps with a chicken dish such as our old favourite: Elizabeth David’s roast chicken with tarragon. An interesting match to this rich and fragrant dish is the Alsace Pinot Noir or a red Sancerre.
