This is the Boissons principal red bottling of Châteauneuf', called simply 'Domaine du Père Caboche', which hails from mature rootstock on the Le Crau plateau. It is blended from 70% Grenache Noir, 10% each of Mourvèdre and Syrah and a diverse 'field blend' of lesser varieties. It is always a hedonistic and sumptuous offering. It has a bright red fruit bouquet and juicy, hedgerow berry palate supported by silky, soft tannins.

| Vinification | The grapes for this Châteauneuf du Pape are hand harvested from 40 to 60 year-old-vines and put in shallow buckets to protect the fruit from being crushed prematurely. The Syrah remains uncrushed while the other varieties are lightly crushed prior to fermentation. The grapes are then fermented in large thermo-regulated stainless steel vats 21 days prior to filtering and bottling. |

Domaine du Père Caboche (Jean-Pierre & Emilie Boisson)
Jean-Pierre Boisson, former long-serving mayor of Châteauneuf-du-Pape, runs Domaine du Père Caboche with his children Emily & Nicolas. Members of the Boisson family have been both winemakers and blacksmiths for generations. The family nickname of Caboche derives from the old Provençal word for 'horseshoe nails' and their Vieilles Vignes cuvée is named after Elisabeth Chambellan, a local blacksmith's daughter who married Jean-Louis Boisson in 1772.
