Jura Arbois: Vin de Paille Domaine Jean-Louis Tissot 2012
A glorious sweet wine that is produced by drying grapes over the winter on a bed of straw ('paille') in a loft. Subsequent pressing of the de-hydrated, honeyed grapes elicits flavours of candied fruits, caramel and orange. Serve chilled.
Tasting Notes
Grapes must be dried for a minimum of 6 weeks on a bed of straw to naturally concentrate the juices. The fermented wine is aged for 3 years in barrel prior to release.
