Minervois: Domaine Le Cazal 'Le Pas de Zarat' 2019
'Le Pas de Zarat' is the Domaine's special cuvée, produced only when favourable conditions prevail, and in limited volumes. Made from a blend of Carignan, Grenache Noir and Syrah, it is packed with dark garrigue fruit scents and tastes with wonderful spicy undertones and pitchy tannins.
Those looking for a southern red with more complexity and longevity will be delighted to discover the Derrojas' old vine cuvée called 'Pas de Zarat'. This enjoys a significantly longer elévage than the 'Tradition' and is racked into and raised in used oak barrels before blending and bottling. Although approachable soon after release if decanted, it will cellar well for at least a decade and will stand up well to flavorsome foods such as wild boar, venison or freshly-foraged fungi.

Domaine Le Cazal
Claude and Martine Derroja preside over 18 hectares of vines, grown on chalk and clay soils, all of which are classified as AOC Minervois. They represent the 5th wine-making generation of the Derroja family who have farmed here since 1870. 'Respect' is Claude's guiding principal for the land, for his wines and his customers. Claude farms under the certified 'Agriculture Raisonée' programme, which favours minimalist intervention in the vineyard and is seen by many as a stepping stone towards becoming fully organic. For those interested in visiting the Domaine, Claude and Martine also run a gîte that can house up to 8 people and has impressive views of the local countryside.
