Vinaigre de Banyuls
It has been a nail-biting transfer season in Yapp Brothers’ condiments department. For bureaucratic reasons too arcane for us to fully comprehend, Gilles Dumangin has stopped producing his Champagne vinegar leaving us with a gap to fill. Serendipitously, we recently received a sample of Christine Campadieu and Vincent Cantie’s excellent ‘Vinaigre de Banyuls’ which comes from a sweet wine base and is perfect for de-glazing pans and adding to salad dressings.
