Ratafia Champenois: Spécialités Dumangin
Gilles Dumangin's delicious Ratafia Champenois (Ratafia de Champagne), made from grape must 'fortified' with Champagne alcohol, has a lovely tawny colour and rich, complex dried fruit flavours. Gilles recommends serving it with melon, cheese and chocolate desserts.
Ratafia Champenois is a subtle blend of selected champagne must and Champagne-based spirits. The 18% alcohol is then aged in oak for a minimum of 6 years in 228L barriques previously used to age top-quality Northern Rhône red wines.

Gilles Dumangin (Champagne J. Dumangin Fils)
Grape growing in the Dumangin family goes back some 350 years - Firmin Dumangin (born in the 1650s) was a viticulteur in the neighbouring village of Ludes. Early in the 21st Century Gilles Dumangin succeeded his father, Jacky, and is a fifth generation Champagne producer. The Dumangin family's tireless efforts to produce the best possible Champagne from their own grapes has been recognised by the prestigious French wine guide, Guide Hachette 2008, which has awarded the Dumangin Grand Réserve a Coup de Cœur.
