Saumur-Champigny Wine
The Filliatreaus' principal wine, in terms of volume, is their 'Domaine' Saumur-Champigny. Redolent of raspberries and blackcurrants and underscored by fresh acidity, it is beloved by bistros and brasseries for its ability to pair well with all manner of Gallic dishes from steak frîtes to pôt au feu. 'La Grande Vignolle' Saumur-Champigny is a denser bottling from mature rootstock planted just east of Saumur. It has more weight and depth than the regular cuvée and can age well for 5 to 10 years. The family's flagship offering is their superb 'Vieilles Vignes' Saumur-Champigny. It hails from 80 to 100 year-old vines and has a core of black fruit and enough tannic grip to mature over 20 years in the best vintages. It makes a fine partner to small game, grilled meats or mushroom dishes.
