Made from a blend of 80% Chenin Blanc, 10% Chardonnay and 10% Cabernet Franc, it has at least 9 months on the lees before disgorging and topping up.

A great apéritif, it pairs well with cheese 'gougères', simple grilled sea bass or trout or poultry in creamy sauces.

An exemplary, bottle-fermented sparkling wine from the Cave de Saumur Co-opérative at Saint-Cyr-en-Bourg. This Saumur Mousseux Brut is made from a blend of Chenin Blanc, Chardonnay and Cabernet Franc. It has has a lively mousse and bright, orchard fruit tastes - ideal as an aperitif, or serve with poultry or white fish.

CellarageAges well in short to medium term - up to 3 years - although it can be enjoyed equally well when newly released.
VinificationPremium quality fruit is pressed and fermented to produce a still wine. This is then vinified in the méthode traditionelle (formerly known as 'Champenois' which is now reserved exclusively for wines made in the Champagne region). A mixture of yeasts and sugar known as a liqueur de tirage is added to the still wine in bottle to induce a secondary fermentation - the by-product of which is carbon-dioxide gas which gives the wine its mousse or 'sparkle'. Gyropalettes are used to tilt and turn the bottles (remuage) to collect deposits of spent yeasts on the bottle closure. The neck of the bottles are topped up and sealed with a proper flared cork. Wine from more than one vintage are blended to give consistency so no vintage is declared.

At Saint Cyr-en-Bourg, just to the south-east of Saumur, the dynamic Vignerons de Saumur Cave Co-opérative has long been a source of really well-made and benignly priced wines. Their Saumur Blanc is a conrnerstone of the Yapp list without which we could barely function. The Cave also produces a versatile sparkling Chenin Blanc, a fine sparkling Crémant de Loire rosé and a supple, youthful red Cabernet Franc.
