"The old vine cuvée, the 2016 Châteauneuf-du-Pape Vieilles Vignes Elisabeth Chambellan appears to have more concentration and mid-palate depth, with lots of black cherry and currant fruits, exotic flower, orange blossom and mint aromas and flavors. It's ripe, yet not overripe, has excellent purity of fruit and sweet tannin. It's certainly going to be an outstanding wine. Tasting Notes
'Elisabeth Chambellan' is the senior, flagship cuvée - it hails from a parcel of 100 year-old vines grown on La Crau plateau. It is from an almost identical blend of grapes to 'Domaine du Père Caboche' principal bottling, but is denser and darker and more structured and age-worthy. It carries the house signature of lashings of ripe red fruit that makes it hard to resist drinking from the time of bottling.

Vinification The grapes are hand harvested from 80-100 year-old vines and put in particularly shallow buckets to protect the fruit from being crushed prematurely. The Syrah and Cinsault remain uncrushed while the other varieties are lightly crushed prior to fermentation. The grapes are then fermented in large thermo-regulated stainless steel vats for 21 days prior to being matured in traditional old wooden tonneau.

Domaine Père Caboche (Jean-Pierre & Emilie Boisson)

Jean-Pierre Boisson, former long-serving mayor of Châteauneuf-du-Pape, runs Domaine Père Caboche with his children Emily & Nicolas.  Members of the Boisson family have been both winemakers and blacksmiths for generations. The family nickname of Caboche derives from the old Provençal word for ‘horseshoe nails’ and their Vieilles Vignes cuvée is named after Elisabeth Chambellan, a local blacksmith’s daughter who married Jean-Louis Boisson in 1772.
