Clairette de Die: Domaine Achard-Vincent 'Tradition'
This organic Clairette de Die is a gentle sparkling wine low in alcohol making it a peerless mid-morning restorative and a great wine for picnics and garden parties. The classic food accompaniment is walnuts (which thrive locally) but it is well suited to all manner of cakes and fruit-based desserts.
The current patron of Domaine Achard-Vincent, and his son Thomas tend 18 hectares of vines that have been farmed organically since 1979 and certified as such since 1982. Their Clairette de Die has a light, creamy mousse, delicate floral aromas and a refreshing palate of white table grapes.

|Vinification||This unique, softly sparkling Clairette de Die wine is made by the ancient Méthode Dioise. After crushing, the grape juice is chilled and then slowly filtered to remove larger yeast cells whilst leaving some sugars and delaying fermentation. Thus at the time of bottling there is still enough residual sugar to induce a secondary fermentation in bottle. This wine must then rest for at least 4 months in bottle prior to disgorgement and rebottling and release to ensure that fermentation is complete.|

Jean-Pierre Achard and his son Thomas farm 18 hectares of vines in the appellation of Clairette de Die, in the Drôme valley, around the village of Sainte Croix, 8 kilometres west of the town of Die. The Domaine Achard-Vincent enjoys a dramatic location in the foothills of the Alps at the confluence of the rivers Drôme and Sure. This impressive, independent estate was an early pioneer of organic viticulture and the vineyard has been fully certified by Ecocert since 1982. The Achards' signature wine, which dominates production is a delicate, gently-sparkling sweet Clairette de Die made from a blend of 80% Muscat and 20% Clairette. Jean-Pierre also makes a dry, sparkling, bottle-fermented Crémant de Die from a blend of Clairette, Aligoté and Muscat.
