Vin de France: 'Pet Nat By Py'

Jean-Pierre Py's Pet Nat (Pétillant Naturel) is a lightly sparkling wine with its origins going back centuries. Made from Sauvignon Blanc and Colombard, it's refreshing and honest with a touch of residual sugar to balance the acidity. Citrus, fennel and green herb notes dominate the nose and its light bubbles and bittersweet finish make it an ideal aperitif. Certified organic.

Tasting Notes

‘Pétillant Naturel’ is a method for making sparkling wine where bottling takes place before fermentation is complete. Also known as ‘méthode ancestrale’, it’s common in appellations like Clairette de Die in the Rhône and Blanquette de Limoux in the Languedoc.

A base of grape juice is blended and fermentation begins before the fermenting liquid is bottled with 18g sugar then sealed with a crown cap (as for beer or cider). The continuing fermentation in bottle creates bubbles of CO2. Fermentation stops when the yeasts lack oxygen and pressure becomes too high for the yeasts to continue working.

There’s a light sediment of the yeast cells remaining, and the wine has a slightly cloudy appearance being unfiltered.

It’s a refreshing wine - serve lightly-chilled with tapas, canapés, grilled fish, seafood or crudités with garlic aioli or as a simple aperitif.

Based in the viticultural heartland between Carcassonne and Narbonne in the commune of Douzens, Jean-Pierre Py is a forward-thinking wine maker who quit the local Cave Co-opérative in 2003 to pursue his dream and make his own wine. In 2008 he put all his vine holdings under organic conversion and his entire output was certified as organic in 2011.
