Vouvray: Jean-Claude & Didier Aubert 'Sec' 2021
Bien classique! This refreshing, apple-scented Chenin Blanc will make a great aperitif or partner to goats cheese and salads. Vouvray Sec is the perfect foil for the locally-made potted pork rillettes, and together they make a dangerous combination as both are extremely more-ish.
A benchmark Chenin from this historic appellation, the refreshingly oak-free Vouvray Sec from Domaine Aubert has a classic Bramley apple bouquet and a lovely crisp clean orchard fruit palate, with a touch of residual sugar which adds a lovely honeyed-edge to its tangy fruit base. Drinking well now but, like most Chenin, it will age gracefully.

Jean-Claude & Didier Aubert
The Aubert family started here in 1823 and, today, Jean-Claude and his son, Didier, produce equal proportions of still and sparkling Vouvray wines from 30 hectares of vines. The area is particularly favoured by a soil of volcanic limestone known as tuffa that not only provides the vines with excellent drainage but can be excavated to create ideal subterranean cellars for aging the wine. The Aubert cellars lie below 12 metres of rock.
