Eggs and Avocado on Sourdough with Chilli and Sriracha

This isn't so much a recipe as a collation of ingredients but it is a regular repast chez Yapp and is both tasty and extremely easy to prepare.

 
Poached Eggs - Avocado - Sourdough - Sr Racha

Ingredients: (Serves 1-2 as a snack or meal).
1 large avocado
2 free range eggs
2 slices of sourdough toast
1 red chilli
Segment of lime
Sriracha sauce

Method:
Lightly toast and lightly butter the sourdough and mash one half of the avocado on to each slice. Dress that with finely chopped chilli to taste and a squirt of lime juice. Place a lightly fried (or poached) egg on each slice and then add black pepper and sriracha sauce to taste.

Recently I've been serving that with a chilled glass of Alvalle 'Original' Gazpacho for which I've developed a predeliction since being introduced to it by a Spanish friend in the summer. (It also makes an epic Bloody Mary).
