Prosecco's appellation (DOC - Denominazione di Origine Controllata) extends across much of north-east Italy and covers some 14,000 hectares. Originally centred around the hills around Conegliano and Valdobbiadene, this area is the heart of Prosecco production and the 6,000 hectare DOCG zone which produces much of the premium and single-vineyard bottlings. Although Brut Prosecco does exist, most bottlings are labelled Extra Dry and Dry with residual sugar of 12-17g/L and 17-32g/L respectively. Prosecco permits up to 15% of Chardonnay, Pinot Bianco (Pinot Blanc) and Pinot Grigio (Pinot Gris) to be included in base wines to increase depth of flavour.
